Maharashtra is blessed. Every summer, the markets explode with some of the world's finest mangoes. Here's how to make the most of it.
The Big Three
Alphonso (Hapus)
The king. Rich, creamy, intensely aromatic. Best eaten raw or blended into a juice with just a pinch of cardamom.
Kesar (Girnar)
From Gujarat, slightly more fibrous but sweeter. Perfect for milkshakes and smoothies.
Ratnagiri
A close cousin to Alphonso but with more tang. Excellent for raw aamras.
How to Pick a Ripe Mango
- Smell the stem end β a ripe mango smells intensely sweet
- Squeeze gently β it should give slightly, not be rock hard
- Colour is misleading β a green mango can be perfectly ripe
- Avoid shrivelled skin β that means over-ripe

Ingredients:
- 2 Alphonso mangoes (peeled and chopped)
- 1 cup chilled yoghurt
- 1/2 cup milk
- 1 tbsp honey
- Pinch of cardamom
Method: Blend all ingredients until smooth. Serve cold. Serves 2.
